On the last day of hunting season I will take some sweet potato pies to the hunters to feast on at the camp. I slice it before leaving home and put the pie pans in gallon zip-lock bags. Grab a slice and enjoy! ;D
3-4 large sweet potatoes cooked, drained, and mashed up. Will make approximately 3-1/2 to 4 cups. Add the following ingredients to potatoes while they are still hot.
1 stick margarine (I use - I Can't Believe It's Not Butter) 2 cups sugar 1 cup milk 3 eggs (beaten) 1 teaspoon vanilla extract 1 teaspoon lemon extract
Place in uncooked pie shells. Will make 3 thin pies or 2 large ones. Bake at 350 degrees for about 50 minutes. For a crisp pie shell, bake for the first 10 minutes at 425 degrees and then turn back to 350 degrees for remaining 40 minutes.

No nutmeg? Kind of surprised on that one. But I'm game for a sweet potato pie anytime!! Thanks for the recipe!!

You are welcomed michihunter - No nutmeg....but it's really tasty! I know you will enjoy...with the lemon extract added it gives you an added unexpected taste!

I'll have to show this recipe to my wife. She is a sweet potato nut. I like them, but she really loves them. To be honest, I have never had sweet potato pie.
