1 lb hot smoked sausage 1 lb regular smoked sausage 1 large onion, finely chopped 1 large bell pepper, finely chopped 1 stalk celery, finely chopped (at least 1 cup) 1 can water chestnuts, finely chopped 2 packages dry chicken noodle soup 2 cups boiling water 2 cups raw rice 1 package slivered almonds Saute suasage in large pan or skillet. Drain, saving drippings. Saute chopped vegetables in sausage drippings. Mix 2 cups boiling water with soup. Mix and boil about 7 minutes in large pan. In large bowl, mix sausage, vegetables, soup, and raw rice (if mixture seems dry, add 1/4 cup water) and put in a covered baking dish. Bake 300 degrees for 1-1/2 hours. Arrange on large platter and top with slivered almonds. Enjoy!
