1 hind quarter vension roast (can be fresh or frozen) Seasoning salt Salt black pepper garlic powder onion powder
Place whole hind quarter into large 2" deep round cake pan. generousely season with above spices. Add enough water to cover the bottom of baking pan. Bake at 275 degress until done adding water as needed to keep the bottom of the pan covered. When done, remove roast from pan...place pan on stove top burner and scrap the pan as you add water to make a broth to dip or pour on the roast.
Do not cover the roast during the baking period and do not bake higher than 275 degress.
A frozen 8-10 pound roast will take about 8-10 hours to bake...a fresh or thawed roast about 6-8 hours.
This serves about 15 to 20 people. Got one in the oven right now...can't wait till dinner time!

Your not all that far....We're in Northern Indiana! Have enough left over from last night for Dinner tonight It just melts in your mouth....very similar to a really good prime rib baked to perfection.....only better!

Don't tempt me Lhonda....I'm down here in Indy..........grab Hoosier, and haul tail up there....our luck, Edge would have it all scarfed down by the time we'd hit Muncie....LOL......'slap....
