I threw this together other night for something to eat.
As many rabbit backstraps as you want or have Cajun Injector marinade(your choice of flavor) Self Rising flour Cajun Shake(comes in the Cajun Injector kit) 2-3 eggs 3 bowls or 2 bowls and a brown paper sack deep fat fryer vegetable oil(or your favorite oil for your fryer)
Wash the rabbit backstrap in good clean water to remove any hair or blood that is on them. Pre-heat deep fryer and oil. Trim the backstraps of silver skin and cut into 2" pieces. Put pieces in a bowl and cover with Cajun Injector Marinade. Put the flour in a clean bowl or brown paper bag, and add as much Cajun Shake as you feel necessary. Break the 2-3 eggs in a 3rd bowl. Put as many pieces of the backstrap as you want in the flour bowl or bag and cover with flour(shake if in a bag). Pull the pieces out of the flour, dip in egg, and cover in flour again. Once you have some covered, drop them in the fryer. Cook until they float and are golden brown. You can wait until they are all covered in flour before frying if you want. They come out juicy and tender. Try not to eat them all in one sitting...Enjoy

Never thought of doing the backstrap on a rabbit,,that sounds really good Doc,,will definately have to try it.

It was delicious. It made little nuggets,like chicken nuggets. I ate so many I thought I was gonna pop. I had to refrain from eating them until I was finished cooking or there wouldnt have been any.

Similar to walleye cheeks. Not too many guys around here ever clean a fish without first taking the cheeks!! Make great nuggets. Anyone else do that?
