Wash your game of choice thoroughly in cold water and soak in water with 1 tablespoon of salt over night. In a large pot pour in 1 cup veggie oil and heat over medium high heat. Add 1 cup of flour and stir over medium high heat until it resembles chocolate and has a nutty smell. Then cut up 2 green or red bell peppers, 2 large white onions, and 6-8 celery stallks. Add veggies to oil and flour and cook until onions are clear, then fill pot with water up to about 2-3 inches from top of pot and bring to a boil.Turn heat down to simmer add 1/2 tablespoon salt and 1 tablespoon pepper. Add 2 bay leaves, and 1/4 teaspoon of cayene pepper. cut game of choice into quarters and place in pot and cover with lid but leave a slight crack so the steam can escape a little, this will keep it from boiling to hard and remain on a simmer. Cook for 1-2 hours (longer the better) In a separate pot make your favorite rice, after gumbo has simmered remove game and strip all meat off the bones and cut into chunks and place back in pot. Place bones back in pot and simmer uncovered for 1 hour. Fluff cooked rice with a fork and place a heap in the middle of the plate and hollow out the center. Fill the center with gumbo and broth ( remove both bay leaves before serving ) You can make a nice garlic bread or hot rolls and this will fill your belly for sure.
